黑 teas are fermented, which means that they undergo a process called oxidation. This process gives black tea its distinct flavor and aroma. The most famous black tea in the world is Darjeeling from India, but China also produces many high-quality black teas such as Yunnan Gold and Keemun.

White tea is made from the young buds of the tea plant and is minimally processed to preserve their delicate flavor and aroma. It's often described as having a light floral or fruity taste with a hint of sweetness. White Peony from Fujian Province is one of the most popular white teas in China.

Yellow tea falls between green and white teas in terms of processing, it's allowed to oxidize slightly before being dried, giving it a unique flavor profile that's both floral and fruity at the same time. Huang Shan Mao Feng from Anhui Province is an excellent example of yellow tea.

Oolong teas are partially fermented, which allows them to have complex flavors that range from floral to fruit notes depending on where they're produced. Tieguanyin (Iron Goddess) from Anxi County in Fujian Province is one of China's best-known oolong teas.

Pu-erh Tea originates from Yunnan Province, it's made by fermenting leaves over time - either naturally or through controlled conditions - resulting in earthy flavors with hints of mossiness or even leatheriness for aged ones like Sheng Pu-erh. Other types include Ripe Pu-erh (Shu Pu-erh) which has undergone fermentation before packaging for quicker aging processes; these two types offer different experiences for connoisseurs worldwide searching for rare treasures among various flavors within this ancient art form known simply as "tea" itself!
